How to make Pulled Pork-Pork Shoulder Butt-Boston Butt

Pulled Pork

Pulled pork is most often made from the pork shoulder butt (sometimes called a Boston Butt). It can be prepared in the oven, in a slow cooker (crockpot), or in a smoker. If you are preparing a whole pork shoulder butt you may want  to use your oven. Most people don't own smokers, or a crockpot large enough to properly cook a whole shoulder butt. The meat may be marinated for 12 to 24 hours prior to cooking. Try marinating in this: 2 cups Orange Juice, 1/4 cup lime or lemon juice, 3 tablespoons minced garlic, freshly chopped thyme, salt and pepper. Tip: Pierce the meat deeply with a fork a few dozen times to help the marinade absorb into the meat.

After removing meat from marinade lightly pat dry and coat with a pork rub. You can find ready made pork rubs in the spice aisle at your local supermarket. Place into a deep roasting pan preferably with a lid. If you don't have a large pan with a lid you can use aluminum foil to to cover the roast, be sure to cover pan completely. Place into a preheated 275 degree F. oven. Roast for 5-8 hours dpending on size. 3-4 lbs for 5 hours, 4-5 lbs 6 hours, 5-7 lbs 7 hours, 7-9 lbs 8 hours. Remove from oven and let sit for 15-20 minutes. Meat should easily shred apart when using a fork to pull meat off of roast.

Chicken Lettuce Wraps




Healthy and easy, low carb, low calorie, chicken lettuce wraps.


Ingredients:
Bnls skinless chicken breast  about 1/2 lb per person
Fresh diced tomato(about 1 tomato per person
1 red onion diced
1 medium cucumber diced
1 can of pinto beans (drained and rinsed)
1/2 cup fresh chopped cilantro
1 jar of salsa verde
low fat shredded cheese (optional)
1 head of Romaine lettuce (large leaves) washed and patted dry
southwest seasoning blend (chili pepper flakes,red pepper flakes, garlic, cumin, onion powder, salt, black pepper) season to taste. You can also use taco or fajita seasoning

Directions:
In a large nonstick skillet, lightly oiled, add chicken to a preheated pan on a medium to medium high setting. Season to taste and stir occasionally.Chicken will cook in less than 15 minutes if your pieces are small. While chicken is cooking prepare vegetables onto a serving platter. Garnish with lemon or lime wedges.  Serve chicken on top of  Romaine leaf, top with assortment of beans, cheese, vegetables,salsa verde, and fresh squeezed lemon or lime juice. Fold over like a burrito or soft taco and enjoy. Low fat, low carb, healthy, and nutritious!

T-Bone Steak
To get the best results when you are either grilling, roasting, or pan frying, allow your meat to come to room temperature before you start cooking. You will end up more tender,juicier, evenly cooked meats. This rule applies to all cuts of beef, pork,lamb,veal,and chicken. By allowing the meat to come to room temperature their is less of a difference in temp. between the meat and the heat source causing less of a constriction in the muscle fibers of the meat. You will always end up with the most tender meat this way. Allow meat to come to room temperature for 1-4 hours before cooking.

How much corned beef do I need?

How much corned beef do you need for your St. Patrick's Day dinner? I would recommend buying at least 3/4 of a lb. to 1 lb per person. When you purchase corned beef there is going to be extra juices in the package which are included in the total weight. There will also be a good deal of shrinkage during the cooking process. If you want leftovers plan on buying over 1 lb. per person.

How can I make my corned beef less salty?

Some companies offer a lower sodium corned beef brisket which are usually offered at the same price as their regular corned beef. However if you cant find any lower sodium corned beef briskets their is another option. This will involve changing the water several times during the cooking process. It might add another hour to the total cooking time, but for those watching their salt intake it is a step worth taking.

What do I do if my corned beef doesn't come with one of those seasoning packets?

Many companies now include a seasoing packet with their product, however if you find yours does not it is just a simple blend of common spices. Corned beef seasonings: Black and white peppercorns, mustard seeds, dried onion and garlic, and bits of bay leaves. You can also use a pickling spice which usually has all these ingredients(this can save you from having to buy each individual spice seperately).

HOW TO COOK A CORNED BEEF BRISKET

Cooking a corned beef brisket: Start by bringing water to a boil in a large pot. When water comes to a boil remove the corned beef from its package and add to the pot (also add any juices from the package for the most flavor). Reduce the heat until the water is at a simmer (not a boil). Simmer for 3-4 hours until fork tender. If you are using a large enough stock pot and intend to add potatoes, carrots, and cabbage, do so for the last 30 minutes of the cooking time.
Carving directions: Slice corned beef in thin diagoal slices across the grain at a slanting angle beginning at any point.

Meat buying tips to save money!

Start saving money now! Making beef stew or need ground beef for your dinner can be expensive nowadays, especially if you have to feed a large family. Look for cuts from the round or chuck that go on sale often. Ask your butcher to grind it for ground beef, or cut it up for stew. The ground beef will be extra lean this way and will most likely save you a couple of dollars per lb.

Or try my version with pork sirloin cutlets instead of chicken. Ask your butcher if they can cut some pork sirloin cutlets for you about one third of an inch thick. Then ask to have them run through the tenderette (or cube steak) machine. Not only will that second step get the cutlets even thinner, it will make them more tender than veal. Also try substituting a white wine (pinot grigio or chardonnay) in place of the chicken stock. I made this for my girlfriend Monday night and she absolutely loved it.

Corned beef is available in several different cuts. There are two cuts from the beef brisket, point cut and flat cut(also called first cut). Then there is corned beef round which is usually made from either an eye round or bottom round. The round cuts are much leaner but usually almost double the cost. Of the two brisket cuts, the flat or first cut brisket is much leaner and has much less waste on it then the point cut. What do I use? I always go for the flat cut brisket.

Grades of beef in the U.S.

  • USDA Prime is the highest grade with the most amount of marbling. Also the most expensive. I would only recommend this for special occasions or for those who can afford it.
  • USDA Choice comes in second with slightly less marbling but at a much more affordable price. There is also the Certified Angus Beef which falls under the USDA Choice category with more marbling than regular choice beef which usually ranges $1-$2 more per pound.
  • USDA Select beef can be found in some markets with much less marbling than choice. It is usually offered at a much lower cost. Not recommended for grilling or broiling in my opinion unless You have time to use a tenderizing marinade. Tip: Look for cheap cuts in this grade if you are making a stew or pot roast.
  • USDA Standard and lower grades are typically not available in retail butcher shops or supermarkets because of their lower quality and degree of toughness.
