Chicken Lettuce Wraps

Healthy and easy, low carb, low calorie, chicken lettuce wraps.

Bnls skinless chicken breast  about 1/2 lb per person
Fresh diced tomato(about 1 tomato per person
1 red onion diced
1 medium cucumber diced
1 can of pinto beans (drained and rinsed)
1/2 cup fresh chopped cilantro
1 jar of salsa verde
low fat shredded cheese (optional)
1 head of Romaine lettuce (large leaves) washed and patted dry
southwest seasoning blend (chili pepper flakes,red pepper flakes, garlic, cumin, onion powder, salt, black pepper) season to taste. You can also use taco or fajita seasoning

In a large nonstick skillet, lightly oiled, add chicken to a preheated pan on a medium to medium high setting. Season to taste and stir occasionally.Chicken will cook in less than 15 minutes if your pieces are small. While chicken is cooking prepare vegetables onto a serving platter. Garnish with lemon or lime wedges.  Serve chicken on top of  Romaine leaf, top with assortment of beans, cheese, vegetables,salsa verde, and fresh squeezed lemon or lime juice. Fold over like a burrito or soft taco and enjoy. Low fat, low carb, healthy, and nutritious!
