To get the best results when you are either grilling, roasting, or pan frying, allow your meat to come to room temperature before you start cooking. You will end up more tender,juicier, evenly cooked meats. This rule applies to all cuts of beef, pork,lamb,veal,and chicken. By allowing the meat to come to room temperature their is less of a difference in temp. between the meat and the heat source causing less of a constriction in the muscle fibers of the meat. You will always end up with the most tender meat this way. Allow meat to come to room temperature for 1-4 hours before cooking.
