Cooking Beef Chuck Short Ribs
Beef Chuck short ribs are a very flavorful cut of beef best prepared by braising at a low heat in the oven for several hours. They are usually cooked in a combination of beef stock and red wine. I start by browning them on top of the stove in a dutch oven,uncovered, with just a little bit of olive oil on medium high heat. After they are browned on all sides I add 1 medium onion roughly chopped, 3 cloves of garlic chopped, 2-4 cups of beef stock, and 2-4 cups of a dry red wine. I use just enough liquid to completely cover the short ribs (how much you will need will depend on the size of the pan or dutch oven you are using). Add salt and pepper to taste. Cover and bring to a simmer. Remove from burner and place in a preheated 300 degree F. oven for 2 hours. Reduce oven temp to 250 and cook for 1 more hour.
