Boneless skinless chicken breast (about 1/2 lb. per person) cut into small thin strips
fresh diced tomato medium size (about 1 per person)
1 red onion diced
1 Large cucumber diced
1 can of pinto beans (drained and rinsed)
1/2 cup fresh chopped cilantro
1 jar of salsa verde
Low fat shredded cheese (optional)
1 large head of Romaine lettuce (large leaves washed and patted dry)
Seasonings: 1 package of taco or fajita seasoning per 2 lbs of chicken
Or Southwest seasoning(Chili pepper flakes,red pepper flakes, garlic, cumin, onion powder, salt, black pepper) season to taste

In a large nonstick skillet, lightly oiled, add chicken to a preheated pan on a medium to medium high setting. Add seasonings and stir occasionally. Chicken will be done in 15-20 minutes.
While chicken is cooking, prepare vegetables onto a seving platter as shown above. Garnish with lemon or lime wedges.
Serve chicken on top of romaine lettuce leaf, top with assortment of beans,veggies,cheese, and salsa verde. Add fresh squeezed lemon or lime juice and salsa verde. Fold it over like a burrioto or soft taco and enjoy! Low fat,low carb,healthy,and nutritous.
