Veal Shank for Osso Bucco:
1 and 1/2 inch thick veal shanks for Osso Bucco

  •  (4) 1 1/2-2 inch thick center cut veal shanks
  •  3 tablespoons vegetable oil
  • 1 medium onion chopped
  • 3 cloves of garlic chopped
  • white or red wine
  • beef,chicken, or veal stock
  • 4 carrots cut into large pieces
  • 4 celery stalks cut into large pieces
  • 3 tablespoons tomato paste
  • sprig of fresh thyme
  • sprig of fresh rosemary
  • salt and pepper to taste
  • All purpose flour

Start: Heat oil in a large dutch oven on top of stove until oil starts to smoke.
Place veal shanks that have been dredged in flour into pan and brown on all sides.
Remove veal from pan.Add vegetables and cook for about 5 minutes.
Add veal shanks back into pan. Add stock and wine until veal is almost completely covered.
Add tomato paste, rosemary, thyme, salt and pepper. Cover and bring to a simmer.
Remove from stovetop and place into a 300 degree F. preheated oven.
Cook for approximately 3 hours in oven until meat falls off the bone.
